Chocolate Mousse

This is the easiest, lightest chocolate mousse ever! The large amount of air that is incorporated into the mix makes it healthier, but the richness of a good Amedei chocolate will make the mousse satisfying for even the sweetest of tooth.

Method

     

  • Lightly whisk to combine equal quantities of crème anglaise and melted good quality chocolate.
  • Place mixture in a siphon or ISI foam gun with two bulbs and charge twice.
  • Foam into a bowl and serve with fresh berries in summer, or poached fruits in winter.
