This is the easiest, lightest chocolate mousse ever! The large amount of air that is incorporated into the mix makes it healthier, but the richness of a good Amedei chocolate will make the mousse satisfying for even the sweetest of tooth.
Method
Lightly whisk to combine equal quantities of crème anglaise and melted good quality chocolate.
Place mixture in a siphon or ISI foam gun with two bulbs and charge twice.
Foam into a bowl and serve with fresh berries in summer, or poached fruits in winter.
